Fun Fact:  You don't have to use an entire box of cake mix when you are making a cake or cupcakes. You can use just 1/2 the box and still get some amazing desserts from it.

That is what I did with these cupcakes. I wanted banana cupcakes, but, not everyone in my house is crazy for them and 24 cupcakes was just too many.  So, I used only 1/2 the box of cake mix and made just a dozen.

Worked perfectly!

  • Cake mix 
  • Bananas
  • Milk
  • Eggs
  • Ground cinnamon
  • Powdered sugar
  • Cream cheese
  • Butter
  • Vanilla

Recipe Notes

  • You really are only going to use 1/2 of your dry cake mix (yellow or vanilla) package. This will be 1 1/2 cups. If desired, you can double this recipe and use the whole box of cake mix. That will give you 24 cupcakes.
  • Be sure your butter and cream cheese are softened before using.
  • Bananas:  The riper the better!
  • Don't over mix your cupcake batter.  It can give you a dense cupcake.
  • Not a fan of cream cheese frosting?  These will also go great with vanilla or chocolate buttercream frosting.
  • Store any leftovers in a covered container in the refrigerator. They are best eaten within a week.

Yield: 12 cupcakes

Ingredients

  • FOR CUPCAKES:
  • 1 1/2 cups dry vanilla or yellow cake mix
  • 1/2 cup mashed bananas
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp ground cinnamon
  • FOR FROSTING:
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 1 tsp vanilla
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 350°F degrees. Line a 12 count cupcake pan with cupcake liners.
  2. In a mixing bowl, beat together dry cake mix, banana and eggs. Beat to combine. Add in milk and cinnamon. Beat until no dry spots remain.
  3. Divide batter evenly into prepared pan.
  4. Bake 12-15 minutes or until toothpick inserted comes out clean.
  5. Let the cupcakes cool completely before frosting.
  6. MAKE FROSTING:
  7. Beat butter, cream cheese and vanilla until creamy. Gradually, add in powdered sugar and beat until creamy.
  8. Frost on cooled cupcakes
