Any Flavor Cake Mix?

Yep.  If chocolate is not your thing, you can use any flavor/brand cake mix.  It does need to be a standard size box.  Approx. 15-18 oz in size will work.

Additional Recipe Notes:

  • Bananas:  The riper, the better.  A great way to mash your bananas?  A potato masher. Works great!
  • Don't over mix your batter.  It can give you a dense loaf of banana bread. Mix your batter until no dry spots are left for a softer bread.
  • Leftovers can be kept in a sealed container/ plastic bag and it's best if it's eaten within a a week.  If you wish to freeze your banana bread, go for it.  Let it cool first, then, store in a freezer safe (covered) container or storage bag.

Prep: 15 mins Cook: 45 mins Yield: 8 slices

Ingredients

  • 1 standard size box chocolate cake mix
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1/2 cup mini chocolate chips, divided

Instructions

  1. Prep the Pan: Preheat your oven to 350°F. Grease a 9-inch loaf pan.
  2. Mix the Batter: In a mixing bowl, beat together the dry cake mix, eggs, and mashed bananas. Don't over-mix your batter. Gently stir in 1/4 cup of the mini chocolate chips.
  3. Bake: Spread the batter evenly into your prepared pan. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  4. Baker's Tip: If the top of the banana bread is getting too dark but it's still not fully baked through, cover the pan loosely with a piece of foil. This will help prevent the top from burning.
  5. Cool & Serve: Let the banana bread cool in the pan for about 30 minutes before slicing and serving.

In the directions, it calls for milk, but no milk is listed in the ingredients. I really want to try this recipe! Thanks
