This recipe actually came from my mother in law. Who, like my mother, loved desserts. This cake is really simple to make and tastes amazing! You can dress it up with frosting or eat it plain. Either way, it's quite delicious.

Banana Buttermilk Cake
For the banana lover in your life! A soft cake packed full of banana flavor and only requires a few simple ingredients.
Ingredients
- 2 1/4 cups flour
- 2 1/2 tsp baking powder
- dash of salt
- 1/2 cup butter, softened
- 1 1/4 cup sugar
- 1 cup mashed bananas ( approx 2-3 medium size bananas)
- splash of vanilla
- 2 eggs
- 1/2 cup buttermilk
Instructions
- Preheat oven to 350 degrees. Grease a 9 x 13 pan pan.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a mixing bowl, beat butter and sugar until creamy. Add in eggs, one at a time, vanilla and mashed bananas. Beat until fully combine.
- Gradually, add in buttermilk and flour mixture, alternating between the two. Beat until combined.
- Spread batter evenly into the prepared pan. Bake 35-40 minutes or until toothpick inserted comes out clean.
- If you wish to frost the cake, let it cool completely beforehand.
