  • Hash brown potatoes
  • Cheese
  • Sour cream
  • Cream of chicken soup
  • Bread crumbs
  • Butter

Substitutes for You!

  • Hash Browns:  I like to use southern style potatoes for this casserole.  However, you can use a shredded version, if desired.  Remember to let them defrost beforehand!  
  • Cheese: Use your favorite.  We like sharp cheddar!
  • Sour Cream:  Plain Greek yogurt is a great substitute for sour cream. 🖒
  • Bread Crumbs:  Crushed up Ritz crackers or brand equivalent.
  • Cream of Chicken Soup:  You can also use cream of mushroom, if you wish.

Ingredients

  • 30 oz frozen hash brown potatoes. thawed
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • salt/pepper, to taste preference

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9 x 13-inch baking dish with non-stick cooking spray or butter and set aside.
  2. In a large mixing bowl, combine the melted butter, cream of chicken soup, sour cream, finely chopped onion, salt, and black pepper. Whisk until smooth.
  3.  Stir the shredded cheddar cheese into the soup mixture. Fold in the thawed hash brown potatoes until they are completely coated by the cheese mixture.
  4. Spread the potato mixture evenly into your prepared baking dish.
  5. Bake uncovered for 55 to 60 minutes, or until the top is golden brown and the casserole is bubbling hot around the edges. Let sit for 5 minutes before serving.
