With Easter just around the corner, I got myself feeling nostalgic  for buttercream candies.  My mom wouldn't make these, but, would get a each a large buttercream egg from Fannie May each year. They were soooo good.

When I found this recipe a few years ago, we lived in Vermont and getting Fannie May wasn't so simple and making them seemed like the logical choice.

This recipe is so simple!  No candy thermometer needed, just a little patience while waiting for them to set.  ;)

Recipe Tips & Notes: 

  • If you are melting your chocolate chips/shortening in the microwave, do this in 30 second intervals, to prevent the chocolate from burning.
  • Don't forget to refrigerate the candy filling before rolling it into balls.  Your filling will be on the softer side and placing it in the fridge will firm it up a bit.  
  • When rolling the filling into balls, it may get a little sticky the longer you work with it.  To help out with this, you can do two things.  First, place the filling back into the fridge to get cold again or coat your hands with a bit of powdered sugar when rolling.  Makes life a little easier.
  • After rolling your filling into balls,  place them into the freezer for at least an hour.  Freezing them is going to prevent them from getting too soft from the warm chocolate.   Make sure you freeze them for the full hour or if you wish, you can freeze them for longer, even  overnight, if needed. 
  • Want to top them with sprinkles/topping?  Do this before the chocolate sets.  I gave some of ours an extra drizzle of chocolate.  This can be done after the chocolate set.
  • Keep any leftovers in the refrigerator or if you wish, the freezer.

Making homemade candy at home is easy with this recipe! A creamy buttercream candy coated in smooth chocolate makes these a lovely and decadent treat.

Ingredients

  • 1/2 cup (1 stick) butter
  • 1 TBSP vanilla
  • 2-3 TBSP whipping cream or half/half
  • 4 cups powdered sugar
  • 12 oz chocolate chips
  • 2 TBSP shortening

Instructions

  1. In a saucepan over low/medium heat, melt the butter. Once melted, remove from the heat and let it cool for 5 minutes. Stir in the vanilla.
  2. Add the powdered sugar to a mixing bowl. Pour in the melted butter mixture and mix until fully combined. Add 1 tablespoon of whipping cream. If the mixture seems too dry, add a bit more cream, about 1 teaspoon at a time (do not exceed 2 tablespoons total). The mixture should be soft but not liquidy.
  3. Place the mixture in the refrigerator for 30 minutes. Meanwhile, line a flat-rimmed baking sheet with parchment paper or silicone baking mats.
  4. When chilled, scoop portions of the candy dough and roll them into 1-inch balls. Place them on the prepared baking sheet. Repeat with the remaining dough.
  5. Place the baking sheet in the freezer and freeze the candies for 1 hour.
  6. In a microwave-safe bowl or in a saucepan over medium heat, melt the chocolate chips together with the shortening until completely smooth.
  7. Dip the frozen candies into the melted chocolate to coat them completely, then place them back onto the baking sheet to set.
  8.  If you wish to top the candies with sprinkles or other toppings, add them before the chocolate sets. You can return them to the refrigerator to speed up the setting process, or let them set at room temperature.
  9. Keep any leftover candies stored in the refrigerator or freezer.
