Diet Soda Brownies

Diet Soda Brownies- Three ingredients and zero guilt! 


If you love a good pan of brownies, but, hate the calories, these are for you.  I have been making these lovelies for years and they never disappoint. 

Similar to my Three Ingredient Soda Cake, but, instead made with a brownie mix and diet soda. 😋




Three Ingredients Needed

  • Dry brownie mix
  • Egg white
  • Diet soda


Recipe Notes

  • Brownie Mix:  Any brand/plain chocolate variety will work. I would avoid anything with flavors mixed in (ex: caramel, nuts, supreme, cookie dough) for the recipe to work.  Use a package size that will fit a 9 x 13 pan. 
  • You are only using the dry mix. Do not make the batter! 
  • Gluten Free and Sugar Free Versions:  I have not tried making these with a gluten free or sugar free box of brownie mix, so, I can't say for certain that it will work.  However, I don't see why they wouldn't.  Just check the size of the package beforehand and adjust the amount of diet soda accordingly.
  • Diet Soda:  As long as it's carbonated and 12 ounces, you can use it!

Ingredients

  • 1 "family size" box of dry brownie mix (intended for a 9x13 pan)
  • 12 oz diet soda
  • 1 egg white

Instructions

  1. Prep the Oven & Pan: Preheat your oven to 350°F. Lightly grease a 9x13-inch baking pan.
  2. Mix the Batter: In a medium mixing bowl, combine the dry brownie mix, diet soda, and egg white. Stir until the ingredients are completely incorporated and the mixture is fully combined.
  3. Bake: Spread the batter evenly into your prepared baking pan. Bake according to the standard box directions for a 9x13-inch pan (approximately 26 minutes, or until a toothpick inserted into the center comes out mostly clean).
  4. Cool & Finish: If you plan on frosting the brownies or adding whipped cream/toppings, let them cool completely beforehand so the toppings don't melt.
