My husband loves chicken fried rice and while I don't mind getting the take out version, sometimes, it's just easier to make it at home.

This recipe needs just a handful of basic ingredients and tastes just as good!

Ingredients Needed

  • Chicken
  • Rice
  • Egg
  • Soy sauce
  • Mixed vegetables
  • Oil
  • Salt/Pepper/Minced garlic
  • Green onions, optional

Recipe Notes

  • Chicken:  I cooked boneless chicken breast for ours, because, honestly, I had it in my freezer.  However, you can use already cooked chicken for this.  It can be chopped or shredded, your choice.  A cup of cooked chicken is a good amount to start with.
  • Mixed Vegetables:  Again, I used what we had in our freezer.  It was a frozen bag of mixed veggies.  You can use stir fry veggies or an Oriental mix too.  Of course, you can also use fresh vegetables, your choice! 
  • Rice:  White, brown or a mixture of both will do the trick.  Just be sure your rice is already cooked.
  • Seasoning:  We are pretty simple eaters around here.  So, if you wish to increase your garlic or want to add a few more spices ( ginger, onion, etc), go for it!

Ingredients

  • 1 boneless chicken breast
  • 1 tsp minced garlic
  • 1 egg + 1 tsp water + 1 tsp soy sauce (mixed together)
  • 2 cups cooked rice
  • 2 TBSP soy sauce
  • 1/2 cup frozen mixed vegetables
  • Oil, for the pan
  • Salt and pepper, to taste preference
  • Green onions (optional, for garnish)

Instructions

  1. Heat about a tablespoon of oil in a skillet over medium heat. Add the minced garlic and cook until fragrant. Add the chicken breast to the skillet. Cook for 5 minutes, then flip the chicken over. Cook for an additional 5 minutes or until the chicken is thoroughly cooked through (reaching an internal temperature of 165°F). Remove the chicken from the skillet and let it rest.
  2. In a small bowl, whisk together the egg, water, and 1 teaspoon of soy sauce. Wipe out the skillet and lower the heat. Heat a teaspoon of oil in the skillet, then pour in the egg mixture. Let the egg cook undisturbed for 1 to 2 minutes or until set. Remove the cooked egg from the skillet.
  3. Chop up your cooked chicken breast and cooked egg into bite-sized pieces. Return the skillet to medium heat, add another teaspoon of oil, and add the frozen mixed vegetables. Stirring frequently, cook until the veggies are fully thawed and tender.
  4. Stir the cooked rice, chopped chicken, and cooked egg into the skillet with the vegetables. Season everything evenly with the 2 tablespoons of soy sauce, along with salt and pepper. Stir well to combine. Cook the mixture for about 5 minutes, stirring occasionally, until everything is heated thoroughly.
  5. Serve immediately. If desired, top with chopped green onions when serving.
