Fluffy Jell-O- Recipes My Mom Gave Me

This recipe is from my sister (the dip lover).  It's just three ingredients and is crazy easy to toss together.  Serve this one at your next party and it will be a guaranteed hit.

Your Three Ingredients

  1. Gelatin (ex: Jell-O)
  2. Whipped Topping (ex: Cool Whip)
  3. Sour Cream

Fluffy Jell-O- Recipes My Mom Gave Me

Can I Use Any Flavor of Jell-O?

Yes. Stick with a 3 oz box.  Do not make the Jell-O! You will only need the gelatin powder.  Also, you do not need to use "Jell-O" brand.  Any brand equivalent will work.  Same goes for a low sugar/sugar free options.

Whipped Topping?

  • AKA "Cool Whip.  Like the gelatin, you can use any brand or variety (low fat/fat free, etc.). Be sure it's thawed well before using.
  • Important:  If your weather is very hot/humid, do not let your whipped topping defrost at room temperature. It can may change the consistency of your whipped topping and it will not work in this recipe.  For hot/humid weather, it is best to let it thaw in your refrigerator.

Sour Cream?

Yes, I now it sounds weird, but, it works.  If desired, you can use plain Greek yogurt, as a replacement.

Can I Add Fruit to This?

Yes. If needed, drain or pat dry the fruit beforehand.  You don't want to add any additional liquid to it. Once that is done, fold in your fruit when you add the whipped topping.

Can I Use Any Flavor Baking Chips?

Of course! If you don't want to use chocolate chips, you can use peanut butter, butterscotch or a combination of your favorite flavors.

Butter

Your butter will need to be melted.  After melting it, be sure to let it cool for about 5 minutes before using.  If you don't have any butter on hand, a neutral oil can be used as a replacement.

Swedish Flop- Recipes My Mom Gave Me

My Mom never made this growing up.  She bought it from a local bakery during my childhood.  I thought everyone got to enjoy this delicious dessert when I was a kid.  But, as I got older, I realized it was something that was popular in the Chicagoland/Northern Illinois area, but not really anyplace else.

So, being the sweet lover I am, I decided to make my own version. Using a cake mix, of course ;)  Don't pass this one up, it's really good.

Ingredients Needed

  • Vanilla cake mix
  • Eggs
  • Milk
  • Instant vanilla pudding
  • Flour
  • Butter
  • Brown sugar
  • Powdered sugar

Recipe Notes

  • Cake Mix: Yes, you can use any brand of cake mix.  Stick with a standard size and a vanilla or yellow flavor.
  • Pans: You will be using two 9 x 13 baking pans.  Yes, with just one cake mix.  The batter will be split evenly between the two pans.
  • Streusel Topping:  Only top one of the cake batters with the streusel topping.  This will be the top of your cake.  The plain batter will be the bottom of your cake.

Raw Flour Note

→This recipe calls for the use of raw flour.  If you have concerns about this, you can use a heat treated flour or do the process at home.

Yes. I've made chocolate, yellow, white, strawberry and more.  They all work.  Just be sure you use a standard size box of cake mix ( 15-18 oz) for this to work.

What About Soda?

Again, any carbonated beverage will work.   I have used cola, root beer and lemon lime.  Again, they all worked,  I have even used diet soda

Eggs

Want to cut back a bit?  Use 4 egg whites instead of 4 whole eggs.  Yes, that will work too.

Recipe Notes

Can I Use Any Flavor Cake Mix?

Yes!  I usually opt for a white/vanilla or yellow cake mix.  However, if you stick with a standard size box ( 15-18 oz), you can use any flavor or brand.   Also, you will only be using the dry mix, not making the cake.

What About Fruit?

Again, yes, use your favorite frozen fruit. Keep it frozen and make sure your fruit will lay in a single layer on the bottom of your baking dish.  Other than that, it's up to you!

Lemon Lime Soda

I have used Sprite, 7-Up, Sierra Mist and generic lemon lime soda for this cobbler. They all work great.

Dry Spots

If your cobbler has a few dry spots after baking, that's OK.   Feel free to use a bit more soda to cover the entire top of the dry cake mix before baking or lightly tip the pan back and forth, so, the soda will spread more evenly.

Important!

After layering your ingredients in the pan,  DO NOT MIX!  I learned this the hard way the very first time I made it.  It will take forever to bake and won't turn out properly.

However, she reminded me of these donuts that our mom made for us. So, while I search for that other homemade donut recipe, I am sharing this one!  These are quick, easy to make and are beyond yummy.

Ingredients Needed

  • Biscuit dough * see recipe notes
  • Butter
  • Ground cinnamon
  • Sugar

Recipe Notes

Can This Be Doubled?

Yep! You can choose the amount of donuts that you wish.  Simply change the serving amount next to the serving size in the recipe card for making it easier.

What Kind of Biscuit Dough is Used?

I used a basic buttermilk biscuit dough (example) and used only 4 of the biscuit pieces. They were frozen, so,  I let them defrost completely before using the dough.  You can also use biscuit dough from the refrigerator section of your grocery store,  such as, Pillsbury

Storage

Keep any leftovers in a covered container. They are best eaten within 2-3 days.  If they last that long. ;)
