Meatloaf isn't a very glamorous dish, but, it's easy to prepare, can feed a crowd and won't cost you a fortune.

But, it can be a bit, dare I say, boring?  So, let's zip it up a little today with some pizza sauce and added cheeses!

Ingredients Needed

  • Ground turkey
  • Bread crumbs
  • Egg
  • Pizza sauce
  • Mozzarella cheese
  • Parmesan cheese
  • Minced onion
  • Garlic powder

Recipe Notes

  • Ground Turkey: Yes, ground beef will also work. Just keep an eye on your internal temperature.  Ground beef should be at 160 degrees when done.  Ground turkey should be at least 165 degrees. 
  • Minced Onion:  It can be found in the spice section of the grocery store. Can't find it? Here you go!
  • Storage: Keep any leftovers in a covered container in the refrigerator.  It should be eaten within 4-5 days.
  • Freezing:  Yes, you can freeze this meatloaf.  Prepare it as noted, except do not top with the final mozzarella cheese. Let it cool completely and store in a freezer safe/covered container or storage bag.  It will stay good for a couple of months.  When you are ready, let it defrost, then, heat in oven and top with mozzarella cheese.

Classic meatloaf with the added bonus of pizza sauce and cheese! Use ground turkey or ground beef for this easy dinner.

Ingredients

For the Meatloaf:

  • 1 lb ground turkey (or ground beef)
  • 2 TBSP minced onion
  • 1 tsp garlic powder
  • 1/4 cup pizza sauce
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup bread crumbs
  • 1 egg

For the Topping:

  • Additional pizza sauce, to taste
  • Additional shredded mozzarella cheese, to taste

Instructions

  1. Prep the Oven & Pan: Preheat your oven to 350°F. Line an 8 or 9-inch baking dish with aluminum foil, then generously spray the foil with non-stick cooking spray.
  2. Mix & Shape: In a large bowl, mix together all of the meatloaf ingredients until fully combined. Form the mixture into a neat loaf shape and place it into your prepared baking dish.
  3. Initial Bake: Bake in the preheated oven for 35 minutes, then carefully remove the dish from the oven.
  4. Add Toppings & Finish: Spread your desired amount of additional pizza sauce over the top of the loaf, and sprinkle generously with extra mozzarella cheese. Return the dish to the oven and bake for an additional 10 to 15 minutes, until the cheese is beautifully melted and the meat is cooked thoroughly. (Optional: Pop the finished meatloaf under a heated broiler for 1–2 minutes to get the cheese bubbly and crispy!)
  5. Rest & Serve: Let the meatloaf rest for about 10 minutes before slicing to keep it juicy and hold its shape. Serve warm.
