What is Dulce de Leche?

  • Caramelized milk. It's very thick and can be found in the baking section or the Hispanic food section of your grocery store.  It's dreamy.  Can't find it in your local store? Check out the recipe card for a link to purchase or make it homemade.
  • 💡 Tip: If your Dulce de Leche is too thick to spread, remove it from the can and put in a microwave safe bowl.  Microwave it for approx. 15-20 seconds to heat, remove and give it a stir. This will make it easier to spread.

Recipe Notes + More Tips

  • Crispy Rice Cereal: AKA "Rice Krispies". You can use Rice Krispies brand or any brand equivalent. Also, if you can find a cinnamon flavored crispy rice cereal, you can use that too.  Simply omit the ground cinnamon from the recipe.
  • When spreading the prepared marshmallow mixture into the pan, use this method.  When adding the top layer, don't fret if it's not perfectly inline with the Dulce de Leche.   If it pokes out a bit, that's OK.
  • Storage: Keep any leftovers in a covered container. It's best if they are stored in the refrigerator and best eaten within a week.

Dulce de Leche Crispy Rice Bars

By Erin | Category: Dessert, No Bake (American)

Prep Time:
40 mins
Total Time:
1 hr 40 mins
Yield:
12-15 bars

Ingredients

  • 6 cups crispy rice cereal
  • 4 tsp ground cinnamon
  • 6 TBSP butter
  • 10.5 oz bag, mini marshmallows
  • 1 tsp vanilla
  • 13.4 oz can, dulce de leche

Instructions

  1. Line a 13 x 9 baking pan with foil. Spray foil with non stick cooking spray.
  2. In a bowl, toss together crispy rice cereal with ground cinnamon. Set aside.
  3. In a saucepan, over low heat melt butter. Then, add in mini marshmallows. Continue melting marshmallows with butter, stirring frequently until they are fully melted and smooth. Remove from heat and stir in vanilla.
  4. Gradually, add cereal mixture into the melted marshmallows mixture. Stir completely to coat. Spread 1/2 of the mixture into the prepared pan.
  5. Next, spread the top evenly with the dulce de leche. Top with the remaining cereal mixture. It's OK if some of the dulce de leche shows through the cereal mixture.
  6. Refrigerate for at least an hour before serving.
