Recipe Notes

  • Maple Syrup: I do know that real maple syrup can be costly. So, if desired, you can use maple flavored syrup for these muffins. However, I highly recommend the real thing.
  • Sour Cream: None on hand? You can replace it with plain Greek yogurt
  • This recipe makes about 9 muffins, instead of the standard 12. Don't over mix your batter.  Simply mix it until not dry spots are left in the batter. A few lumps are ok. Over mixing can give you a dense muffin.
  • Storage: Keep any leftovers in a covered container. No need to refrigerate, unless the weather is hot/humid in your area.

Ingredients

  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • dash of salt
  • 1/4 cup brown sugar
  • 1 egg
  • 1/4 cup butter, melted, then, cooled
  • 6 TBSP milk
  • 1/4 cup real maple syrup
  • 1/8 cup sour cream
  • splash of vanilla
  • 1 1/4 cup powdered sugar
  • 2 TBSP melted butter
  • 2-3 tsp real maple syrup

Instructions

  1. Preheat oven to 400 degrees. Grease a 12 count muffin pan or line it with liners. (Note: this recipe will make approx. 9 muffins).
  2. In a bowl, whisk together flour, salt, baking powder and ground cinnamon. Set aside.
  3. In a clean bowl, whisk together sugar, egg, (cooled) melted butter and sour cream. Add in syrup, milk and vanilla. Whisk until fully combined and smooth.
  4. Add in flour mixture and mix until no dry spots are remaining. Do not over mix your batter.
  5. Divide the batter evenly into the prepared muffin pan. Bake for 16-20 minutes or until a toothpick inserted comes out clean. Let muffins cool about 15-20 minutes before adding glaze.
  6. Make Glaze: Whisk glaze ingredients until smooth. If your glaze is too thick, you can add just a smidgen (max = 1 tsp) of milk. Drizzle on warm muffins.
  7. Keep leftover muffins in a covered container in the refrigerator.
