Rainbow Bundt Cake (Doctored Cake Mix)- Jazz up your box of ordinary cake mix! This colorful bundt cake is perfect for your next celebration or use this method to simply give your ordinary weekday dessert a little boost.
I'm not ashamed to admit that I love cake mixes. In fact, I love all kinds of boxed mixes. Brownie mixes, pancake mixes, muffin mixes...you name it.
For this recipe, we are making a fun rainbow cake (great for St Patty's Day ☘), but, the additional ingredients we add to the cake mix can be used with any kind of cake you wish.

Ingredients Needed
- Cake mix
- Instant pudding mix
- Salt + Vanilla
- Butter
- Eggs
- Sour cream or Plain Greek yogurt
- Milk
- Additional For Rainbow Cake 🌈
- Powdered sugar
- Food coloring
How to Make A Rainbow 🌈
- First, make your batter.
- Then, divide the plain batter equally into 6 bowls.
- Tint each bowl a different color. When you are done, you will have 1 bowl of red, 1 bowl of green and so on.
- After generously greasing your pan, spoon the red batter onto the bottom of your pan. Go all the way around the pan, Follow the same pattern with the remaining colors.
- Don't mix your colors/batter! Let them stay separate.
- Bake your cake.
Recipe Notes
- If you stick with a standard size box of dry cake mix, this will work with any flavor or brand. You can use the batter for a sheet cake, cupcakes or a layer cake. Use the same baking times as directed on your box of cake mix.
- Be sure to get instant pudding mix. After buying cook and serve many years ago, I always like to remind people that there is a difference. Also, don't make the pudding. You will just use the dry mix.
💡 Tips for Getting Your Cake Out of the Pan
- Generously grease your bundt pan. If you have it, use a cooking spray with flour in it. See recipe card for product suggestion/purchase.
- Give your cake a chance to cool for 8-10 minutes, then, run a sharp knife along the edges and center of the pan.
- Invert the cake onto a plate or platter that is larger than the cake and give it a chance to fall naturally. If it's not cooperating, give the bottom of the pan a few good taps.
- If your cake breaks a bit, no worries! You can always cover it up with the glaze.
