I have been making these muffins since 2011, the year I started my first food blog. The recipe comes from Skinnytaste and needs just a few ingredients.

They are great for breakfast, dessert or a snack!

Ingredients Needed:

  • Self rising flour
  • Baking soda
  • Sugar
  • Vanilla
  • Egg white
  • Ricotta cheese
  • Mini chocolate chips

Recipe Notes:

  • Self Rising Flour: None on hand? Replace it with 2 cups of AP flour, 1 teaspoon salt and 1 tablespoon of baking powder.
  • Ricotta: The fat free version is going to lower your calories.  However, you can use full fat or low fat version too.
  • Toppings: I topped ours with a little brown sugar and additional mini chocolate chips.  This is optional, but, it does give them a little extra something! 
  • Storage: Keep any leftovers in a covered container. They are best eaten within a week.
  • Freezing: Yes, you can freeze these. Let them cool completely, then, freeze in a freezer safe/covered container or storage bag.  They will be good for a couple of months.

Chocolate Chip Muffins with Ricotta Cheese

Cook Time: 15 mins
Hands-Off Time: 10 mins
Yield: 12

Ingredients

  • 2 cups self rising flour
  • 1/2 tsp baking soda
  • 3 TBSP butter, softened
  • 3/4 cup white sugar
  • 3 egg whites
  • 8 oz ricotta cheese
  • splash of vanilla
  • 1/8 cup milk
  • 9 TBSP mini chocolate chips

Instructions

  1. Preheat oven to 375 degrees. Grease a 12 count muffin pan or line with cupcake papers.
  2. Whisk flour with baking soda. Set aside.
  3. In a mixing bowl, beat together butter and sugar until creamy. Add in egg whites, ricotta cheese and milk. Beat to combine.
  4. Add in flour/baking soda and mix until just combine. Don't over mix your batter.
  5. Fold in mini chocolate chips
  6. Divide batter evenly into prepared pan. If desired, you can top them with additional mini chocolate chips.
  7. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
