Three Cheese Soup- Recipes My Mom Gave Me

We don't eat a ton of soup around here, with the exception of my Mom's Potato Soup and this cheesy one. It's delicious served with a side of crusty bread! 


Ingredients

  • Flour + Butter
  • Cheeses
  • Chicken Broth
  • Whipping cream
  • Dried Spices: onion, garlic, paprika, salt and pepper
  • Dijon mustard

Recipe Notes

  • Cheeses: I chose to use sharp cheddar, Parmesan and cream cheese. You can go with your favorites. Use just one kind or mix and match.  You will need 2 cups of cheese total.
  • Whipping Cream:  If you wish, whole milk can be used as a substitute.
  • Keep a close eye on your soup pot.  It can burn quickly.  Keep whisking it frequently and don't turn up your heat too high.  It's best at a medium level.
  • Storage: Keep any leftovers in a covered container in the refrigerator. It's best eaten within a week. I don't recommend freezing this soup, due to the cheese content.  It could separate when reheating.

Ingredients

  • 2 TBSP butter
  • 2 TBSP flour
  • 2 tsp Dijon mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 4 cups chicken broth/stock
  • 1 cup whole milk or whipping cream
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • salt/pepper, to taste preference

Instructions

  1. In a saucepan over medium heat, melt butter. Add in flour and whisk to combine. Cook them together for about a minute.
  2. Whisk in chicken broth, salt, pepper, onion, garlic, mustard, and paprika. Increase heat slightly and let it come to a simmer. Let it simmer for about 5-8 minutes, whisking frequently, until it thickens.
  3. Remove from heat and add in cheeses and milk (or cream). Stir until the cheese is melted and the soup is hot. If you need to place it back onto the heat, be sure the heat is on low. Taste and season, if needed.
