No Bake Oat Cookies-When you need a cookie and don't want to turn on the oven! Simple cookies made with oats, chocolate and creamy peanut butter.
It's been humid in Michigan this summer. That means, lots of no bake desserts. No hot oven and sweet treats?! Sounds perfect to me ;)
Ingredients Needed
- Butter
- Sugar
- Unsweetened cocoa powder
- Milk
- Creamy peanut butter
- Vanilla
- Rolled oats (old fashion)
Recipe Notes
- This recipe makes about a dozen (1 inch size) cookies. You can make your cookies larger or smaller according to your preference. You can also double the recipe easily to make more cookies.
- Storage: Keep any leftover cookies in a covered container. If it's hot/humid in your area, store them in the refrigerator.
- You can freeze these cookies too. Make the recipe as noted until the cookies are completely set. Then, store in a freezer safe, covered, container or storage bag.
- Oats: This recipe requires rolled oats ( AKA "old fashion oats"). I don't recommend using quick cooking oats for these, your cookies may not turn out properly.
Boiling the Peanut Butter Mixture
- First, don't skip this step!
- Why do it? Boiling the peanut butter/butter mixture will dissolve the sugar, evaporates any excess liquid and acts as a binding agent to hold your cookies together.
- Don't boil your liquid for over 2 minutes, it can give you dry cookies.
No Bake Oat Cookies

Ingredients
- 2 tbsp butter
- 1/2 cup sugar
- 1 tbsp unsweetened cocoa powder
- 2 tbsp milk
- 1/4 cup creamy peanut butter
- splash of vanilla
- 1 cup old fashion oats
Instructions
- Place old fashion oats into a mixing bowl. Set aside.
- Line a flat rimmed baking sheet with parchment paper or silicone mats.
- In a saucepan over medium heat, melt butter. Then, add in sugar, cocoa powder, milk and peanut butter.
- Stirring frequently, heat mixture until it comes to a boil. Let it boil for 2 minutes. Remove from heat and stir in vanilla.
- Carefully pour the mixture on top of oats. Mix well to coat completely.
- Scoop about a tablespoon of the mixture and place it on the prepared baking sheet. Continue with the remaining oats.
- Refrigerate the cookies for an hour to cool/set before serving.
