Recipe Notes

  • This recipe makes about a dozen (1 inch size) cookies. You can make your cookies larger or smaller according to your preference.  You can also double the recipe easily to make more cookies.
  • Storage: Keep any leftover cookies in a covered container.  If it's hot/humid in your area, store them in the refrigerator. 
  • You can freeze these cookies too.  Make the recipe as noted until the cookies are completely set. Then, store in a freezer safe, covered, container or storage bag.
  • Oats:  This recipe requires rolled oats ( AKA "old fashion oats"). I don't recommend using quick cooking oats for these,  your cookies may not turn out properly. 


Boiling the Peanut Butter Mixture

  • First, don't skip this step! 
  • Why do it?  Boiling the peanut butter/butter mixture will dissolve the sugar, evaporates any excess liquid and acts as a binding agent to hold your cookies together.
  • Don't boil your liquid for over 2 minutes, it can give you dry cookies.

Hands-Off Time: 30 mins
Yield: 12 cookies

Ingredients

  • 2 tbsp butter
  • 1/2 cup sugar
  • 1 tbsp unsweetened cocoa powder
  • 2 tbsp milk
  • 1/4 cup creamy peanut butter
  • splash of vanilla
  • 1 cup old fashion oats

Instructions

  1. Place old fashion oats into a mixing bowl. Set aside.
  2. Line a flat rimmed baking sheet with parchment paper or silicone mats.
  3. In a saucepan over medium heat, melt butter. Then, add in sugar, cocoa powder, milk and peanut butter.
  4. Stirring frequently, heat mixture until it comes to a boil. Let it boil for 2 minutes. Remove from heat and stir in vanilla.
  5. Carefully pour the mixture on top of oats. Mix well to coat completely.
  6. Scoop about a tablespoon of the mixture and place it on the prepared baking sheet. Continue with the remaining oats.
  7. Refrigerate the cookies for an hour to cool/set before serving.
