Pancake Mix Chocolate Chip Cookies-These chocolate chip cookies are soft on the inside and have nice crispy edges. It's an easy one bowl recipe that starts with a box of pancake mix.
Never underestimate a chocolate chip cookie recipe. There are so many ways you can make them and this is a quick way I discovered myself just a few years ago.
It calls for a couple of cups of pancake mix and it makes a delicious batch of cookies.
Ingredients Needed
- Butter
- Sugar ( white and brown)
- Egg
- Vanilla
- Pancake mix
- Chocolate chips
Recipe Notes
- Pancake Mix: You can use any brand of pancakes mix. However, you will need a mix that only requires water as an additional ingredient. See below link (in "used in this recipe) for a brand suggestion.
- Your cookies will be on the thinner side. But, if baked properly, they will be a soft cookie with a crispier edge.
- Don't forget to refrigerate your dough after making and before using. The dough will be on the softer side and adding it to the refrigerator will make working with it easier. I refrigerate ours for at least 30 minutes, but, you can do this for longer or even overnight, if you wish.
- Storage: Keep any leftover cookies in a covered container. No need to refrigerate, unless the weather is hot/humid in your area. They are best eaten within a week or two.
- Freezing: You can freeze these cookies, if you wish. Bake as noted in recipe and let them cool completely. Then, store in a covered, freezer safe, container or storage bag. They will be good for several months.

Pancake Mix Chocolate Chip Cookies
These chocolate chip cookies are soft on the inside and have nice crispy edges. It's an easy one bowl recipe that starts with a box of pancake mix.
Ingredients
- 3/4 cup butter, softened
- 1/2 cup white sugar
- 1/2 brown sugar
- 1 egg
- 1 tsp vanilla
- 2 cups dry pancake mix
- 1 cup chocolate chips
Instructions
- In a mixing bowl, beat butter and both sugars until creamy. Add in egg and vanilla, then, beat to combine.
- Gradually, add in pancake mix and beat until just combined. Don't over mix your batter.
- Stir in chocolate chips.
- Place the dough in the refrigeator for 30 minutes.
- While the dough is chilling, preheat the oven to 350 degrees and line a flat rimmed baking sheet with parchment paper or silicone mats.
- When ready, scoop about a tablespoon or two of dough and place on prepared baking sheet.
- Continue with remaining dough.
- Bake 10-13 minutes or until the edges are brown. Let the cookies cool 10 minutes on the baking sheet before removing. Then, remove from baking sheet and cool completely on a wire rack.
