  • Pancake mix
  • Sugar
  • Mini chocolate chips
  • Milk
  • Plain Greek yogurt 
  • Vanilla

What Kind of Pancake Mix Should I Use?

You can use any brand of pancakes mix you wish.  Just make sure it only requires water to make. 


Plain Greek Yogurt?

If desired, you can use sour cream instead. 


Storage

Keep any leftovers in a covered container.  No need to refrigerate, unless it's really hot/humid in your area.  It's best eaten within a week.

Pancake Mix Chocolate Chip Coffee Cake

Ingredients

For the Cake & Topping:

  • 2 1/2 cups dry pancake mix (just-add-water style)
  • 1/3 cup sugar
  • 1/2 cup mini chocolate chips
  • 1/2 cup milk
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 tsp vanilla
  • 1/4 cup sugar (for topping)
  • 1/2 tsp ground cinnamon (for topping)

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 TBSP milk

Instructions

  1. Prep the Oven & Dish: Preheat your oven to 375°F. Grease an 8x8-inch baking dish.
  2. Mix the Batter: In a large bowl, combine the dry pancake mix, 1/3 cup sugar, and the mini chocolate chips. Add in the milk, vanilla, and plain Greek yogurt (or sour cream), mixing until a batter forms.
  3. Assemble & Layer: Spread the batter evenly into the prepared baking dish. In a separate small bowl, whisk together the 1/4 cup sugar and ground cinnamon. Evenly sprinkle this cinnamon-sugar mixture over the top of the batter, pressing it down very lightly.
  4. Bake: Bake for 20 to 25 minutes or until the top is golden brown. Let the coffee cake cool for about 10 minutes before applying the glaze.
  5. Glaze & Serve: While the cake is cooling, whisk together the powdered sugar and 1 TBSP of milk in a small bowl until completely smooth. Drizzle the glaze evenly over the warm cake before slicing.
