Ingredients Needed

  • Carrot cake mix
  • Egg whites
  • Milk
  • Plain Greek yogurt

Recipe Notes

  • Cake Mix:  Yes, this recipe will work with any flavor cake mix.  It simply needs to be a standard size box.  Figure anything between 15 to 18 oz.  
  • Frosting:  Of course, you can also use any flavor frosting too.  I like to microwave it for anywhere from 20-30 seconds to thin it out.  Then, I dip the tops of the donuts right into the frosting.  Now, you don't have to do it in this manner.  You can simply frost them with the frosting right out of the package or make your own.   
  • Important- -if you are going to microwave your frosting, be sure to transfer the frosting to a microwave safe bowl first.  If you wish to microwave the whole container of frosting (you can), make sure to remove the foil seal first!   Foil + Microwave= bad stuff can happen

Baked Carrot Cake Donuts

Ingredients

  • 1 standard size box carrot cake mix
  • 2 egg whites
  • 2 cups plain Greek yogurt
  • 1/3 cup milk
  • 1 can cream cheese frosting

Instructions

  1. Prep the Oven & Pan: Preheat your oven to 425°F. Grease a 6 or 12-count regular-size donut pan.
  2. Mix the Batter: In a mixing bowl, beat together the dry carrot cake mix, egg whites, milk, and plain Greek yogurt until completely combined.
  3. Bake & Cool: Fill the cavities of your prepared donut pan about 2/3 full. Bake for 7 to 9 minutes, or until the donuts spring back when lightly touched. Let the donuts cool in the pan for about 15 to 20 minutes before turning them out to frost.
  4. Melt the Frosting: Once the donuts are cool, empty the contents of the cream cheese frosting into a microwave-safe bowl. Microwave for 20 to 30 seconds, or until the frosting is thinned out. Stir it lightly.
  5. Glaze the Donuts: Dip the tops of the cooled donuts into the warm, thinned frosting. If desired, immediately decorate them with sprinkles before the glaze sets. Let the frosting set and cool completely for about 10 to 15 minutes before serving.
