My sister in law has been making these bars as long as I have been married.  That, my friends, is 25 years! She has brought these dreamy bars to just about every Christmas and even after 25 years, they are still delicious. 

Finally, after one Christmas, I asked her for the recipe and now, of course, I make them here at home.  They are pretty rich, so, they are a special occasion dessert.

But, you can make them anytime you are craving that yummy combination of chocolate and mint. 💚

Ingredients Needed

  • Chocolate cake mix
  • Butter
  • Egg
  • Gelatin powder + Boiling water
  • Powdered sugar
  • Shortening
  • Mint extract
  • Chocolate chips

Your Layers:

  • (bottom) The chocolate base, thanks to a chocolate cake mix.
  • (middle)-  A creamy mint flavored filling.
  •  (top)- More chocolate, courtesy of melted chocolate chips (and some butter)

Recipe Notes

  • Unflavored Gelatin Powder:  You can find this in the same section as the "Jell-O" in your grocery store. You usually can get 4- 0.25 oz size packets in a box.  However, if you can't, check out the link in my recipe card or if you get another brand/option, simply only use half of a tablespoon of plain, unflavored gelatin powder.  Be sure it's plain!
  • Food Coloring: Totally optional! It's just more festive. 🎄
  • Melting Chocolate Chips:  You can do this on your stove top or if desired, your microwave.  If you use the microwave, melt in 30 second intervals, to prevent burning.

Yield: 15 bars

Ingredients

  • FOR BOTTOM LAYER:
  • 1- standard size box, chocolate cake mix
  • 1/3 cup butter, softened
  • 1 egg
  • FOR MINT LAYER:
  • 1 envelope (.025 oz) plain gelatin
  • 1/4 cup boiling water
  • 4 cups powdered sugar
  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 1/4 TSP mint/peppermint extract
  • green food coloring, optional
  • FOR TOP LAYER:
  • 1 3/4 cup chocolate chips
  • 1/4 cup butter

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
  2. In a mixing bowl, beat together dry cake mix, butter and egg.
  3. Press the mixture evenly into the the bottom of your prepared baking dish.
  4. Bake for 15 minutes. Remove and cool completely.
  5. MINT LAYER:
  6. In a mixing bowl, dissolve gelantin powder in boiling water. Let it sit for just a few minutes to cool.
  7. Then, add in 2 cups of powdered sugar. Beat to combine.
  8. Add in butter, shortening, extract and if using, food coloring.
  9. Beat for about a minute or until creamy.
  10. Add in remaining powdered sugar and beat until smooth
  11. Spread evenly on top of cooled chocolate cake mix crust.
  12. TOP LAYER:
  13. In a saucepan over low heat, melt chocolate chips and butter until completely melted and smooth.
  14. Carefully spread melted chocolate on top of milk layer.
  15. Refrigerate for at least an hour before serving.
