Chicken and Gnocchi Soup- Creamy soup made with chicken and potato gnocchi. Just like the classic soup at Olive Garden Restaurants!
I love it when dinner is done in less than an hour!
This lovely soup is just that. It's a hearty soup that will be done in about 45 minutes and yes, it really does taste like the version that Olive Garden serves.
Side it with a few crackers or crunchy bread rolls to finish it off.
Ingredients Needed
- Chicken
- Gnocchi
- Fresh spinach
- Carrots
- Garlic/Onion/Celery/Thyme
- Butter
- Salt/Pepper
- Half/Half
- Chicken broth
Recipe Notes
- Chicken: It must be cooked chicken! It's a great way to use any leftovers you have in the kitchen or go with rotisserie, canned or packaged. For canned or packaged, you will need to drain any water from the packages before using. If you need to make it from scratch, use about a pound of raw chicken.
- Onion: I used minced onion for our soup. However, obviously, fresh will work too. That goes for the garlic and thyme, as well.
- Half/Half: Whipping cream can be used as a substitute or you can also use 1 cup half/half and 1 cup whipping cream.
- Spinach: Not a fan? We aren't. You can use less or simply omit it all together. It's still delicious.
What is Gnocchi?
They are small, pasta-like dumplings. They are made in a variety of flavors, but, for this soup, we are using potato gnocchi. Fresh gnocchi is a better option than frozen. However, you can use frozen, if you prefer. Simply boil a smidgen longer.
