Recipe Notes

  • Chicken: (for oven) for quicker baking time, try and use thin sliced chicken breasts or you can even use chicken tenders.  To use what you have on hand, slice/cut the chicken into thinner or smaller pieces before cooking.
  • Plain Greek yogurt can be used as a replacement for sour cream
  • Stuffing:  AKA "Stove Top Stuffing" or a brand equivalent. 
  • Cooking time can vary, depending on your chicken size or slow cooker.  The internal temp of your chicken should be at least 165 degrees (F) before serving.
  • Keep any leftovers in a covered container in the refrigerator. It is best eaten within 2-3 days.

Chicken and Stuffing Casserole: For the Oven and Slow Cooker

An easy casserole that is filled with chicken, stuffing, cream of chicken soup and creamy sour cream. Great for your oven and slow cooker!

Ingredients

  • 1.25 lb boneless chicken breast
  • 7 oz dry stuffing mix
  • 10 oz cream of chicken soup
  • 1/3 cup sour cream or plain Greek yogurt
  • 1 cup chicken broth (for oven version)
  • 2/3 cup hot water (for oven version)

Instructions

  1. FOR THE OVEN:
  2. Preheat oven to 400°F degrees. Grease a 9 x 13 baking pan.
  3. Lay the chicken breasts evenly on the bottom of the prepared baking dish.
  4. In a bowl, add in dry stuffing mix. Add in chicken broth and hot water. Stir to moisten the stuffing. Set aside.
  5. In a clean bowl, whisk together soup and sour cream. Spread the mixture evenly on top of chicken breasts. Top with stuffing.
  6. Bake for 30-35 minutes or until chicken is cooked thoroughly.
  7. FOR THE SLOW COOKER:
  8. Grease your slow cooker, then, place chicken breasts on the bottom of the pot.
  9. Top with dry stuffing mix.
  10. In a bowl, whisk together sour cream and soup. Pour over stuffing.
  11. Cover and cook on low for 4-5 hours or high for 3-4 hours.
