Brown Sugar Carrots-Recipes My Mom Gave Me

Ingredients Needed:

  • Carrots
  • Brown sugar
  • Butter
  • Water
  • Dried parsley, optional 


Recipe Notes:

  • Carrots:  I use a 1 pound bag of pre-cut and pre-washed baby carrots.  It just makes life a bit easier.  However, you can use whatever type of carrots you wish.  Just keep them about the same size (coins will also work)  if you are cutting them yourself.  You will need about 3 cups.
  • Storage: Keep any leftovers in a covered container in the refrigerator. They are best eaten within a week.

Flavorful carrots that only need just a few ingredients.  They are great for a weeknight dinner or your next holiday gathering! 

Ingredients

  • 1 lb baby carrots
  • 4 TBSP butter
  • 1/4 cup brown sugar, packed

Instructions

  1. Place the baby carrots in a medium saucepan and add just enough water to cover them. Bring to a boil over medium-high heat. Reduce the heat slightly and simmer for 8 to 10 minutes, or until the carrots are fork-tender. Drain well and return the carrots to the pan.
  2. Turn the heat down to low. Add the butter and brown sugar.
  3. Stir gently but continuously for 2 to 3 minutes until the butter and sugar melt completely. 
  4. Serve with any additional butter/sugar syrup.
