French toast with cream cheese filling is a delicious breakfast twist. Spread a mixture of cream cheese and sugar between slices of bread, dip in French toast batter, and cook until golden brown. Serve hot with syrup or fruit for a delightful treat.

This recipe wasn't something my mom made when I was young, although, she did make traditional French toast.   Nope, this was a recipe that I discovered from her when I got older.  She made it one weekend while I was visiting with my kids and I instantly fell in love with it.

It's pretty filling, so, I wouldn't  recommend it for your everyday weekday breakfast, but, it is perfect for a special occasion,  brunch or simply when you want a sweet treat.

Recipe Notes

Bread

I recommend using a thicker sliced bread.  For example, Texas toast or a brioche. Don't get me wrong...any type of sliced bread will work for this.  However, a thicker bread will hold up better once it's dipped in the egg mixture. 

Cream Cheese

I like to use a whipped cream cheese for this recipe.  It's easier to work with and spread on the bread slices.  But, go with your favorite brand and flavor.  Let it soften before use to make your life easier.

Ingredients

French Toast:
  • 8 slices thick bread
  • 3 eggs
  • 3/4 cup whole milk or whipping cream
  • 1 TBSP vanilla
  • Butter (for skillet)
Cream Cheese Filling:
  • 8 oz whipped cream cheese, softened
  • 2 TBSP powdered sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla

Instructions

  1. Prepare the Filling: In a mixing bowl, beat together the whipped cream cheese, powdered sugar, ground cinnamon, and 1 tsp vanilla until fully combined. Set aside.
  2. Prepare the Egg Mixture: In a separate shallow bowl, whisk together the eggs, milk (or cream), and 1 TBSP vanilla.
  3. Assemble the Sandwiches: Spread a generous layer of the cream cheese filling on a slice of bread, then top it with another slice of bread to make a sandwich. Repeat with the remaining slices of bread to make 4 sandwiches total.
  4. Cook: Melt about 1 tablespoon of butter in a skillet over medium heat. Dip a cream cheese sandwich into the egg mixture, coating it thoroughly and letting any excess mixture gently drip off.
  5. Place the coated sandwich in the skillet. Cook for 1 to 2 minutes per side until beautifully browned on both sides. Repeat with the remaining sandwiches, adding more butter to the skillet as needed.
  6. Serve immediately, topped with extra butter, fresh fruit, or a dusting of powdered sugar.
