This recipe wasn't something my mom made when I was young, although, she did make traditional French toast.   Nope, this was a recipe that I discovered from her when I got older.  She made it one weekend while I was visiting with my kids and I instantly fell in love with it.

It's pretty filling, so, I wouldn't  recommend it for your everyday weekday breakfast, but, it is perfect for a special occasion,  brunch or simply when you want a sweet treat.

  • Eggs
  • Milk
  • Ground cinnamon
  • Cream cheese
  • Powdered Sugar
  • Vanilla

Recipe Notes

Bread

I recommend using a thicker sliced bread.  For example, Texas toast or a brioche. Don't get me wrong...any type of sliced bread will work for this.  However, a thicker bread will hold up better once it's dipped in the egg mixture. 

Cream Cheese

I like to use a whipped cream cheese for this recipe.  It's easier to work with and spread on the bread slices.  But, go with your favorite brand and flavor.  Let it soften before use to make your life easier.

Ingredients

  • 8 slices, thick bread
  • 3 eggs
  • 3/4 cup, whole milk or whipping cream
  • 1 TBSP vanilla
  • butter, for skillet
Filling:
  • 8 oz, whipped cream cheese, softened
  • 2 TBSP powdered sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla

Instructions

Make Filling
  1. In a mixing bowl, beat together cream cheese, powdered sugar, ground cinnamon and vanilla until fully combined. Set aside.
Make Your French Toast
  1. In a bowl, whisk together eggs, milk, vanilla and ground cinnamon.
  2. Spread a slice of bread with the cream cheese filling. Top with another slice of bread. Continue with the remaining slices of bread.
  3. Over medium heat, melt about a tablespoon of butter in a skillet. Dip an entire cream cheese sandwich into the egg mixture. Coat it well and gently shake off any excess.
  4. Add the coated sandwich in the skillet. Cook on for about 1-2 minutes, then, flip it over and cook the other side for the same amount of time. You want both sides to be browned. Continue with remaining sandwiches.
  5. Serve immediately with a butter, fruit or powdered sugar.
